I was introduced to this soup at our homeschool co-op and immediately asked for the recipe! It is so so good! Per usual for me, I have deviated from the original recipe, and I tend to not totally follow an exact recipe when cooking, but this recipe is as close as possible to what I do. This soup is yummy, cheesy, and such a comfort food on a cold day!
Creamy Italian Sausage Soup
Ingredients
- 1 lb Italian sausage
- 1/2 onion diced
- 2 tbsp minced garlic
- 1 large jar marinara sauce (can sub tomato sauce if needed; add extra Italian seasoning if so)
- 1 can diced tomatoes
- 1-2 tbsp Italian seasoning
- 16 oz chicken broth
- 1 cup mozzarella cheese shredded
- 1/2 cup parmesan cheese shredded
- 1-2 cups heavy cream
- 1/2-1 lb pasta whatever type of noodles you want! Cheese tortellini is awesome!
Instructions
- Cook sausage, onion, and garlic on medium heat until meat is cooked through.
- The following can be done in a pot on the stove, or in a slow cooker:
- Combine marinara, diced tomatoes, broth, and seasonings. Bring to a simmer.Add in cooked sausage mixture. (If using a slow cooker, let soup cook on low for 2-4 hours.)
- Turn heat to low, add in cheeses and heavy cream. Stir until cheese is melted.
- Meanwhile, cook pasta until ALMOST done. Add into soup mixture.
- Serve and top with more shredded cheese!

I don’t always follow measurements exactly. I tend to measure with my heart, and it’s ok if you do the same!
